Here's a quick way to make protein cup cakes. I swear I eat these almost every day. All you need is some dry protein pancake mix, water and a coffee mug.
My favorite is made by P28. (This is a 3 Pack of different flavors)
They have all kinds of flavors and the price isn't too steep.

This one is my personal favorite for protein pancakes.
It's a smaller coffee mug and it's good for a giggle.
Keep in mind, you don't want your mug to be too big, this will make the bottom surface to large thus making your cake too flat.
3. Mix 1/2 of the recommended mix...
About 1/4 cup mix to 1/4 cup water.
Add water to your desired thickness.
Just know, a little water goes a long way and before you know it you can add up with a soupy mix. It should fill up no more than 1/3 of your coffee mug, otherwise it will spill over in the microwave and make a huge mess.
4. Microwave for 2 minutes.
Once it's cooled for a minute or so you should be able to scoop in out pretty easily with a fork. Just slip a fork down side of the mug between the mug and the cake.
It should slip out pretty much withe minimal effort.
Give it a slice down the middle and put whatever topping you like.
